Today, I just wanna keep things simple and joyful and share a simple oatmeal recipe I made up!
With a little tweaking and a lot of love, it’s become Violet’s favorite comfort food.
It’s our go-to breakfast or lunch when she’s teething or feeling under-the-weather
(and I love that oatmeal is so affordable and fast to whip up)!
I’ll share the recipe below: hope you enjoy it as much as she does!
Oh, and to make things extra-fun, I illustrated some Strawberry Recipe Cards in honor of this recipe! You can find the printable in my shop if you’d like to make some 😀
Violet’s Strawberry-Chocolate Oatmeal:
- 1 c. rolled oats
- 2 Tbsp. cocoa powder
- Pinch of salt
- 1 3/4 c. whole milk
- 1/2 tsp. almond extract (use less if you don’t love almond flavor)
- Small handful of brown sugar
- 1 banana, chopped
- Strawberries and an extra banana, chopped, for topping
- Walnuts for topping Mom & Dad’s 😉
Combine in a saucepan: oats, cocoa, salt, and milk.
Bring to a boil, stir in the almond extract, brown sugar, and banana.
Reduce heat to low and cook, stirring occasionally, for about 5-8 minutes, or until it’s the consistency you like.
Spoon into bowls, and top with fresh strawberries, banana, and walnuts (if desired).
Splash a little milk on top, stir, and enjoy!
Serves 2 adults and 1 toddler 😉
